It’s time to make cookies!! Yum. These are vegan, chocolate, and chewy cookies with vegan white chocolate (!!) and macadamia nuts. What more could you ask for right?
When I was at Whole Foods the other day, I saw Vegan and Gluten-Free Whoopie Pies made by a company called The Piping Gourmet. They are sold in the freezer section and I’ve seen them at Whole Foods all over the Chicago area (but I’m sure they’re sold in other states too). Not only are they gluten-free and certified vegan, but they are non-GMO and Kosher.
They come in a variety of flavors, including chocolate mint, chocolate vanilla, and vanilla lemon. I decided to try the chocolate vanilla and the vanilla vanilla.
On to how they tasted–so the two flavors were completely different. The chocolate was moist, quite good, and tasted how I imagine a whoopie pie would taste (it was my first time having one), but the vanilla was quite dry and hard. It was so dry that I’m wondering if I simply bought a bad box.
Overall they weren’t my favorite dessert, but they weren’t bad either. It’s not very often that a company is both vegan AND gluten-free, so if you are looking for a treat that falls under both of those categories, they might be worth a try.

I placed an order for vegan macarons from a company called Sweet Maresa’s for my birthday. Run by a woman named Maresa Volante, she specializes in vegan macarons and works with a vegan bakery called Lagusta’s Luscious in New Paltz, NY. Together, they sell cakes, chocolates, cookies, pastries, and their amazing macarons. Using ethically-sourced ingredients, they create wonderful organic, fair-trade, and vegan treats.
Of course, I had to order a lot because this is a taste test!
I’d been dreaming of the delicious macarons that I’d had from La Durée in Paris and figured I could never find a vegan replacement that tasted just as good. But I was wrong.
Pumpkin you make my heart swoon! And ’tis the season for pumpkin, right? I made pumpkin chocolate chip cupcakes AND cake with cream cheese frosting. Same recipe….just made enough batter to make cake and cupcakes. Good thing I did because everything disappeared pretty quickly.
This was my first time using vegan cream cheese, which I was a little worried about, but the frosting turned out wonderfully. It was just like “regular” (or non-vegan) cream cheese frosting–sweet and smooth with a little bit of saltiness. YUM. Read More
I recently went to Minneapolis with my friends Jenn and Sylvia and had vegan tapioca pudding at a restaurant called Birchwood Café. They have a ton of vegetarian and vegan options if you’re ever in the Minneapolis area. While most of the food was quite good, the tapioca pudding was my favorite thing there (the vegan potato leek soup was great too)!
Once I got home from the trip I decided to try and recreate the recipe. What I made isn’t exactly the same, but it is delicious! I used coconut cream and soy milk as the base, but if you want it to be extra coconuty (not a word, I know), then you can use coconut cream and coconut milk. For toppings, you can used shredded coconut, chocolate chips, raspberries, or simply sprinkle on some cinnamon, like I did in the photo above.
I suggest going to an Asian market to buy the tapioca pearls. They’re not sold at many other places.
